- Zucchini - 2 medium
- Chicken thighs - 300 grams, boneless and skinless
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Spiralize the zucchini to create noodles and set aside.
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Season the chicken thighs with salt, pepper, cinnamon, turmeric, cumin, and paprika, then add them to the skillet.
- Cook the chicken for about 6-8 minutes on each side until browned and cooked through.
- Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips.
- Add the spiralized zucchini to the same skillet and sauté for 3-4 minutes until slightly softened.
- Return the sliced chicken to the skillet, add lemon juice and chopped cilantro, and combine everything well.
- Serve hot, garnished with additional cilantro if desired.
