Ingredients

  • Zucchini - 2 medium
  • Chicken thighs - 300 grams, boneless and skinless
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Spiralize the zucchini to create noodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Season the chicken thighs with salt, pepper, cinnamon, turmeric, cumin, and paprika, then add them to the skillet.
  5. Cook the chicken for about 6-8 minutes on each side until browned and cooked through.
  6. Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips.
  7. Add the spiralized zucchini to the same skillet and sauté for 3-4 minutes until slightly softened.
  8. Return the sliced chicken to the skillet, add lemon juice and chopped cilantro, and combine everything well.
  9. Serve hot, garnished with additional cilantro if desired.
