Ingredients

  • Chicken (preferably leg quarters) - 400 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1 teaspoon
  • Cinnamon stick - 1
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken broth - 500 ml
  • Msemen bread (or substitute with flatbread) - 2 pieces
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent.
  2. Stir in the grated ginger, turmeric, cumin, coriander, cinnamon stick, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
  3. Add the chicken pieces to the pot, browning them on all sides for about 5-7 minutes.
  4. Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and let it simmer for 30-35 minutes or until the chicken is cooked through and tender.
  5. While the chicken is cooking, prepare the msemen bread by either making it from scratch or warming up store-bought flatbread.
  6. Once the chicken is done, remove it from the pot and let it rest for a few minutes. Shred the chicken into bite-sized pieces, discarding the bones.
  7. Return the shredded chicken to the pot, stirring to combine with the sauce, and let it heat through for another 5 minutes.
  8. To serve, place the msemen bread on a plate, spoon the chicken and sauce over it, and garnish with fresh cilantro.
