Ingredients
- Chicken (preferably leg quarters) - 400 grams
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1 teaspoon
- Cinnamon stick - 1
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken broth - 500 ml
- Msemen bread (or substitute with flatbread) - 2 pieces
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent.
- Stir in the grated ginger, turmeric, cumin, coriander, cinnamon stick, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
- Add the chicken pieces to the pot, browning them on all sides for about 5-7 minutes.
- Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover and let it simmer for 30-35 minutes or until the chicken is cooked through and tender.
- While the chicken is cooking, prepare the msemen bread by either making it from scratch or warming up store-bought flatbread.
- Once the chicken is done, remove it from the pot and let it rest for a few minutes. Shred the chicken into bite-sized pieces, discarding the bones.
- Return the shredded chicken to the pot, stirring to combine with the sauce, and let it heat through for another 5 minutes.
- To serve, place the msemen bread on a plate, spoon the chicken and sauce over it, and garnish with fresh cilantro.
