Ingredients
- Green lentils - 150 grams
- Msemen (Moroccan flatbread) - 2 pieces
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the lentils under cold water and set them aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the cumin, coriander, turmeric, paprika, salt, and black pepper. Cook for 1-2 minutes to toast the spices.
- Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and let simmer for about 25-30 minutes, or until the lentils are tender.
- While the lentils are cooking, prepare the msemen by warming them in a pan or oven until they are soft and warm.
- Once the lentils are cooked, taste and adjust seasoning if necessary.
- To serve, place one msemen on each plate, spoon the lentil mixture over the top, and garnish with fresh cilantro.
