Ingredients

  • Green lentils - 150 grams
  • Msemen (Moroccan flatbread) - 2 pieces
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the lentils under cold water and set them aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Stir in the cumin, coriander, turmeric, paprika, salt, and black pepper. Cook for 1-2 minutes to toast the spices.
  5. Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and let simmer for about 25-30 minutes, or until the lentils are tender.
  6. While the lentils are cooking, prepare the msemen by warming them in a pan or oven until they are soft and warm.
  7. Once the lentils are cooked, taste and adjust seasoning if necessary.
  8. To serve, place one msemen on each plate, spoon the lentil mixture over the top, and garnish with fresh cilantro.
