Ingredients

  • Green lentils - 150 grams
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon - 1, for serving
  • Moroccan bread (Khobz) - 2 pieces

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and zucchini to the pot. Sauté for another 5 minutes until the vegetables are slightly softened.
  4. Stir in the ground cumin, coriander, paprika, salt, and black pepper, cooking for 1 minute to release the spices' aromas.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and cover. Simmer for 25-30 minutes, or until the lentils are tender.
  6. While the lentils are cooking, steam the Moroccan bread until warm and fluffy.
  7. Once the lentils are cooked, taste and adjust seasoning if necessary. Stir in the chopped cilantro.
  8. To serve, place the warm bread on plates, ladle the lentil mixture over the top, and garnish with fresh lemon juice.
