Ingredients
- Green lentils - 150 grams
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon - 1, for serving
- Moroccan bread (Khobz) - 2 pieces
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and zucchini to the pot. Sauté for another 5 minutes until the vegetables are slightly softened.
- Stir in the ground cumin, coriander, paprika, salt, and black pepper, cooking for 1 minute to release the spices' aromas.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and cover. Simmer for 25-30 minutes, or until the lentils are tender.
- While the lentils are cooking, steam the Moroccan bread until warm and fluffy.
- Once the lentils are cooked, taste and adjust seasoning if necessary. Stir in the chopped cilantro.
- To serve, place the warm bread on plates, ladle the lentil mixture over the top, and garnish with fresh lemon juice.
