Ingredients

  • Chicken thighs - 400 grams
  • Almond flour - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Chicken broth - 300 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the skillet, stirring for another 1-2 minutes until fragrant.
  3. Season the chicken thighs with salt, black pepper, turmeric, cumin, and cinnamon. Add them to the skillet, browning on both sides for about 5 minutes each.
  4. Pour the chicken broth over the chicken, bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, until the chicken is cooked through and tender.
  5. While the chicken is cooking, prepare the Paleo flatbreads. In a bowl, combine almond flour and a pinch of salt. Gradually add water until a dough forms.
  6. Divide the dough into two balls and roll each out into thin flatbreads. Cook each flatbread on a hot, dry skillet for about 2 minutes on each side until golden.
  7. Once the chicken is done, remove it from the skillet and shred it with two forks. Return the shredded chicken to the broth and stir to combine.
  8. To serve, place the flatbreads on a plate, top with the chicken and broth mixture, and garnish with fresh cilantro.
