Ingredients
- Chicken thighs - 400 grams
- Almond flour - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Chicken broth - 300 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the skillet, stirring for another 1-2 minutes until fragrant.
- Season the chicken thighs with salt, black pepper, turmeric, cumin, and cinnamon. Add them to the skillet, browning on both sides for about 5 minutes each.
- Pour the chicken broth over the chicken, bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, until the chicken is cooked through and tender.
- While the chicken is cooking, prepare the Paleo flatbreads. In a bowl, combine almond flour and a pinch of salt. Gradually add water until a dough forms.
- Divide the dough into two balls and roll each out into thin flatbreads. Cook each flatbread on a hot, dry skillet for about 2 minutes on each side until golden.
- Once the chicken is done, remove it from the skillet and shred it with two forks. Return the shredded chicken to the broth and stir to combine.
- To serve, place the flatbreads on a plate, top with the chicken and broth mixture, and garnish with fresh cilantro.
