- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons

- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Bell pepper, diced - 1 medium
- Zucchini, diced - 1 small
- Ras el Hanout spice blend - 1 tablespoon
- Cilantro, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium-sized pot, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, bell pepper, and zucchini to the pot; cook for another 5-7 minutes until the vegetables are tender.
- Stir in the Ras el Hanout spice blend, salt, and black pepper, cooking for an additional minute to release the spices' aroma.
- Drain the soaked rice and add it to the pot, stirring to coat it with the vegetable mixture.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover the pot, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat, fluff the rice with a fork, and stir in chopped cilantro and lemon juice before serving.
