Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Zucchini, diced - 1 small
  • Ras el Hanout spice blend - 1 tablespoon
  • Cilantro, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium-sized pot, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, bell pepper, and zucchini to the pot; cook for another 5-7 minutes until the vegetables are tender.
  4. Stir in the Ras el Hanout spice blend, salt, and black pepper, cooking for an additional minute to release the spices' aroma.
  5. Drain the soaked rice and add it to the pot, stirring to coat it with the vegetable mixture.
  6. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover the pot, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  7. Remove from heat, fluff the rice with a fork, and stir in chopped cilantro and lemon juice before serving.
