- Almond flour - 150g
- Egg - 1 large
- Mozzarella cheese - 100g, shredded
- Cream cheese - 50g, softened
- Ras el Hanout - 1 tablespoon
- Olive oil - 1 tablespoon
- Zucchini - 100g, thinly sliced
- Red bell pepper - 50g, diced
- Red onion - 30g, thinly sliced
- Feta cheese - 50g, crumbled
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, egg, mozzarella cheese, cream cheese, Ras el Hanout, olive oil, salt, and black pepper. Mix until a dough forms.
- Place the dough onto a parchment-lined baking sheet and press it into a round pizza shape, about 1 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes until golden brown.
- While the crust is baking, prepare the toppings. In a skillet, sauté the zucchini, red bell pepper, and red onion in a little olive oil until just tender, about 5 minutes. Season with salt and pepper.
- Remove the crust from the oven and layer the sautéed vegetables evenly over the top.
- Sprinkle crumbled feta cheese and fresh cilantro over the vegetables.
- Return the pizza to the oven and bake for an additional 8-10 minutes until the cheese is melted and bubbly.
- Allow the pizza to cool slightly before slicing and serve warm.
