Ingredients

  • Almond flour - 150g
  • Egg - 1 large
  • Mozzarella cheese - 100g, shredded
  • Cream cheese - 50g, softened
  • Ras el Hanout - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Zucchini - 100g, thinly sliced
  • Red bell pepper - 50g, diced
  • Red onion - 30g, thinly sliced
  • Feta cheese - 50g, crumbled
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, egg, mozzarella cheese, cream cheese, Ras el Hanout, olive oil, salt, and black pepper. Mix until a dough forms.
  3. Place the dough onto a parchment-lined baking sheet and press it into a round pizza shape, about 1 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes until golden brown.
  5. While the crust is baking, prepare the toppings. In a skillet, sauté the zucchini, red bell pepper, and red onion in a little olive oil until just tender, about 5 minutes. Season with salt and pepper.
  6. Remove the crust from the oven and layer the sautéed vegetables evenly over the top.
  7. Sprinkle crumbled feta cheese and fresh cilantro over the vegetables.
  8. Return the pizza to the oven and bake for an additional 8-10 minutes until the cheese is melted and bubbly.
  9. Allow the pizza to cool slightly before slicing and serve warm.
