Ingredients

  • Chickpeas - 240 grams, cooked and drained
  • Quinoa - 60 grams, uncooked
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 50 grams, grated
  • Ras El Hanout spice blend - 2 teaspoons
  • Coriander - 1 tablespoon, chopped
  • Cumin - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. Rinse the quinoa under cold water and cook it in a pot with 120ml of water. Bring to a boil, then reduce heat and simmer for about 15 minutes until the water is absorbed. Fluff with a fork and set aside.
  2. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  3. Add the cooked quinoa, chopped red onion, minced garlic, grated carrot, Ras El Hanout, chopped coriander, cumin, olive oil, salt, and black pepper to the mashed chickpeas. Mix well until all ingredients are combined.
  4. Form the mixture into two equal-sized patties, pressing firmly to hold them together.
  5. Heat a non-stick skillet over medium heat and lightly grease with a little olive oil. Cook the patties for 4-5 minutes on each side until golden brown and heated through.
  6. Toast the whole wheat burger buns in the skillet for 1-2 minutes until lightly golden.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced tomato, and avocado. Top with the other half of the bun and serve immediately.
