- Lemon - 1, juiced
- Chickpeas (cooked) - 100 grams
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and red bell pepper. Cook for an additional 5 minutes until the vegetables start to soften.
- Add the chopped tomato, cilantro, parsley, paprika, cumin, turmeric, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a simmer. Allow it to cook for 10 minutes to let the flavors meld.
- Add the fish fillets and chickpeas to the pot. Gently push the fish into the stew and simmer for another 10 minutes, until the fish is cooked through and flakes easily.
- Finish with lemon juice, adjusting seasoning if necessary, and serve hot with crusty bread or over couscous.
