- Tomato - 1 large, diced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Seafood mix (shrimp, mussels, calamari) - 300 grams
- Fish stock - 400 ml
- Cilantro - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and diced red bell pepper and cook for another 2 minutes.
- Add the sliced carrot and zucchini, cooking for an additional 5 minutes until they begin to soften.
- Stir in the diced tomato, paprika, cumin, salt, and black pepper. Cook for 3-4 minutes until the tomato breaks down.
- Pour in the fish stock and bring the mixture to a simmer.
- Add the seafood mix and cook for 5-7 minutes, or until the shrimp are pink and the mussels have opened.
- Remove from heat and stir in chopped cilantro and lemon juice.
- Serve hot, garnished with additional cilantro if desired.
