  • Tomato - 1 large, diced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Seafood mix (shrimp, mussels, calamari) - 300 grams
  • Fish stock - 400 ml
  • Cilantro - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and diced red bell pepper and cook for another 2 minutes.
  3. Add the sliced carrot and zucchini, cooking for an additional 5 minutes until they begin to soften.
  4. Stir in the diced tomato, paprika, cumin, salt, and black pepper. Cook for 3-4 minutes until the tomato breaks down.
  5. Pour in the fish stock and bring the mixture to a simmer.
  6. Add the seafood mix and cook for 5-7 minutes, or until the shrimp are pink and the mussels have opened.
  7. Remove from heat and stir in chopped cilantro and lemon juice.
  8. Serve hot, garnished with additional cilantro if desired.
