Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 15 grams, finely chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1/4 small, finely chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Ground black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine quinoa and water. Bring to a boil over high heat.
  3. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and quinoa is fluffy.
  4. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork and let it cool.
  5. In a mixing bowl, combine the chopped parsley, mint, diced tomato, cucumber, and red onion.
  6. Add the cooled quinoa to the vegetable mixture.
  7. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  8. Pour the dressing over the quinoa and vegetable mixture, and toss gently to combine.
  9. Serve chilled or at room temperature, garnished with additional herbs if desired.
