- Pumpkin - 300 grams, peeled and diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Celery - 1 stalk, chopped
- Carrot - 1 small, diced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Ginger powder - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Vegetable broth - 500 ml
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, garlic, celery, and carrot. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the diced pumpkin, cumin, coriander, ginger, and paprika. Cook for another 2-3 minutes to toast the spices.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 15 minutes, or until the pumpkin is tender.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender in batches.
- Season with salt and black pepper to taste. Stir in the fresh cilantro and lemon juice before serving.
