Ingredients

  • Pumpkin - 300 grams, peeled and diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, chopped
  • Carrot - 1 small, diced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Ginger powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, garlic, celery, and carrot. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the diced pumpkin, cumin, coriander, ginger, and paprika. Cook for another 2-3 minutes to toast the spices.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 15 minutes, or until the pumpkin is tender.
  5. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender in batches.
  6. Season with salt and black pepper to taste. Stir in the fresh cilantro and lemon juice before serving.
