  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Vegetable broth - 500 ml
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the diced pumpkin to the pot and stir for another 5 minutes, allowing it to soften slightly.
  3. Sprinkle in the ground cumin, ground coriander, and paprika, stirring well to coat the pumpkin evenly with the spices.
  4. Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes or until the pumpkin is tender.
  5. Using an immersion blender, blend the soup until smooth and creamy. Alternatively, you can transfer it to a blender in batches.
  6. Season with salt and black pepper to taste. Serve hot, garnished with chopped cilantro.
