- Vegetable broth - 500 ml
- Cilantro - 2 tablespoons, chopped (for garnish)

Steps
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the diced pumpkin to the pot and stir for another 5 minutes, allowing it to soften slightly.
- Sprinkle in the ground cumin, ground coriander, and paprika, stirring well to coat the pumpkin evenly with the spices.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes or until the pumpkin is tender.
- Using an immersion blender, blend the soup until smooth and creamy. Alternatively, you can transfer it to a blender in batches.
- Season with salt and black pepper to taste. Serve hot, garnished with chopped cilantro.
