- Pizza dough - 200 grams
- Pumpkin, peeled and cubed - 200 grams
- Olive oil - 2 tablespoons
- Fresh sage leaves, chopped - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red onion, thinly sliced - 1 small
- Garlic, minced - 2 cloves
- Chickpeas, drained and rinsed - 100 grams
- Harissa paste - 1 tablespoon
- Fresh parsley, chopped - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, toss the cubed pumpkin with 1 tablespoon of olive oil, cumin, coriander, paprika, salt, and pepper.
- Spread the seasoned pumpkin on a baking sheet and roast for about 20 minutes, or until tender and slightly caramelized.
- While the pumpkin is roasting, prepare the pizza dough according to package instructions or your preferred recipe.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced red onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
- Add the chickpeas and harissa paste to the skillet, stirring well to combine. Cook for an additional 2-3 minutes until heated through.
- Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a pizza stone or baking sheet.
- Spread the chickpea mixture evenly over the dough, then top with the roasted pumpkin and chopped sage.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Remove from the oven, garnish with fresh parsley, slice, and serve warm.
