  • Preserved lemon - 1/2, flesh removed and rind diced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a large mixing bowl, combine diced cucumber, halved cherry tomatoes, and thinly sliced red onion.
  2. Add chopped parsley and mint to the bowl.
  3. Carefully remove the flesh from the preserved lemon and dice the rind into small pieces; add to the salad.
