- Olive oil - 2 tablespoons
- Mozzarella cheese - 150 grams, shredded
- Preserved lemons - 1, rind only, thinly sliced
- Red onion - 1/2, thinly sliced
- Bell pepper (any color) - 1/2, thinly sliced
- Kalamata olives - 50 grams, pitted and halved
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Crushed red pepper flakes - optional, to taste
Steps
- Preheat the oven to 220°C (428°F).
- On a lightly floured surface, roll out the pizza dough to your desired thickness (about 1/2 cm).
- Transfer the rolled-out dough to a pizza stone or a baking sheet lined with parchment paper.
- Drizzle the olive oil evenly over the pizza base.
- Sprinkle the shredded mozzarella cheese over the dough, covering it evenly.
- In a bowl, combine the sliced preserved lemons, red onion, bell pepper, and kalamata olives. Season with cumin, salt, black pepper, and crushed red pepper flakes if using.
- Spread the vegetable mixture evenly over the cheese on the pizza.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbling.
- Once baked, remove the pizza from the oven and let it cool for a couple of minutes.
- Garnish with fresh parsley before slicing and serving.
