Ingredients

  • Pizza dough - 250 grams
  • Olive oil - 2 tablespoons
  • Mozzarella cheese - 150 grams, shredded
  • Preserved lemons - 1, rind only, thinly sliced
  • Red onion - 1/2, thinly sliced
  • Bell pepper (any color) - 1/2, thinly sliced
  • Kalamata olives - 50 grams, pitted and halved
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Crushed red pepper flakes - optional, to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. On a lightly floured surface, roll out the pizza dough to your desired thickness (about 1/2 cm).
  3. Transfer the rolled-out dough to a pizza stone or a baking sheet lined with parchment paper.
  4. Drizzle the olive oil evenly over the pizza base.
  5. Sprinkle the shredded mozzarella cheese over the dough, covering it evenly.
  6. In a bowl, combine the sliced preserved lemons, red onion, bell pepper, and kalamata olives. Season with cumin, salt, black pepper, and crushed red pepper flakes if using.
  7. Spread the vegetable mixture evenly over the cheese on the pizza.
  8. Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbling.
  9. Once baked, remove the pizza from the oven and let it cool for a couple of minutes.
  10. Garnish with fresh parsley before slicing and serving.
