- cooked chickpeas - 240 grams
- preserved lemons - 30 grams (rind only, seeds removed)
- tahini - 2 tablespoons (30 grams)
- garlic - 1 clove
- olive oil - 2 tablespoons (30 ml)
- water - 60 ml
- ground cumin - 1/2 teaspoon
- smoked paprika - 1/2 teaspoon
- salt - 1/4 teaspoon
- fresh parsley - for garnish
Steps
- Drain and rinse the cooked chickpeas under cold water.
- In a food processor, combine the chickpeas, preserved lemon rind, tahini, garlic, olive oil, water, ground cumin, smoked paprika, and salt.
- Blend until the mixture is smooth and creamy, adding more water if needed to achieve the desired consistency.
- Taste and adjust seasoning as necessary, adding more salt or lemon if desired.
- Transfer the hummus to a serving bowl, drizzle with a little olive oil, and garnish with fresh parsley.
