Ingredients

  • cooked chickpeas - 240 grams
  • preserved lemons - 30 grams (rind only, seeds removed)
  • tahini - 2 tablespoons (30 grams)
  • garlic - 1 clove
  • olive oil - 2 tablespoons (30 ml)
  • water - 60 ml
  • ground cumin - 1/2 teaspoon
  • smoked paprika - 1/2 teaspoon
  • salt - 1/4 teaspoon
  • fresh parsley - for garnish

Steps

  1. Drain and rinse the cooked chickpeas under cold water.
  2. In a food processor, combine the chickpeas, preserved lemon rind, tahini, garlic, olive oil, water, ground cumin, smoked paprika, and salt.
  3. Blend until the mixture is smooth and creamy, adding more water if needed to achieve the desired consistency.
  4. Taste and adjust seasoning as necessary, adding more salt or lemon if desired.
  5. Transfer the hummus to a serving bowl, drizzle with a little olive oil, and garnish with fresh parsley.
  6. Serve immediately with fresh vegetables or pita bread.
