Ingredients
- Couscous - 150 grams
- Water - 250 ml
- Olive oil - 2 tablespoons
- Preserved lemons - 1 whole, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
- Chickpeas - 100 grams, cooked and drained
- Pine nuts - 2 tablespoons, toasted
Steps
- In a medium saucepan, bring 250 ml of water to a boil and add 1/2 teaspoon of salt.
- Once boiling, stir in 150 grams of couscous and remove from heat. Cover and let it sit for 5 minutes.
- In a large bowl, mix together the chopped preserved lemons, olive oil, minced garlic, ground cumin, ground coriander, black pepper, and additional salt if needed.
- Fluff the couscous with a fork and add it to the bowl with the lemon mixture. Stir to combine.
- Fold in the chopped parsley, mint, halved cherry tomatoes, and cooked chickpeas.
- Toast the pine nuts in a dry skillet over medium heat until golden brown, then sprinkle over the couscous before serving.
