Ingredients

  • Couscous - 150 grams
  • Water - 250 ml
  • Olive oil - 2 tablespoons
  • Preserved lemons - 1 whole, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Chickpeas - 100 grams, cooked and drained
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. In a medium saucepan, bring 250 ml of water to a boil and add 1/2 teaspoon of salt.
  2. Once boiling, stir in 150 grams of couscous and remove from heat. Cover and let it sit for 5 minutes.
  3. In a large bowl, mix together the chopped preserved lemons, olive oil, minced garlic, ground cumin, ground coriander, black pepper, and additional salt if needed.
  4. Fluff the couscous with a fork and add it to the bowl with the lemon mixture. Stir to combine.
  5. Fold in the chopped parsley, mint, halved cherry tomatoes, and cooked chickpeas.
  6. Toast the pine nuts in a dry skillet over medium heat until golden brown, then sprinkle over the couscous before serving.
