- Chickpeas - 400 grams (canned, drained)
- Preserved lemon - 1 small, pulp removed and rind finely chopped
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Breadcrumbs - 50 grams
- Egg - 1 large
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2 (whole wheat or regular)
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
Steps
- In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
- Add the chopped preserved lemon, red onion, garlic, cilantro, cumin, coriander, salt, black pepper, breadcrumbs, and egg to the mashed chickpeas. Mix well to combine all ingredients thoroughly.
- Shape the mixture into two equal-sized patties and refrigerate for about 10 minutes to help them hold their shape during cooking.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the patties and cook for 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, slice the burger buns in half and toast them lightly if desired.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced tomato, and avocado. Top with the other half of the bun and serve immediately.
