Ingredients

  • Chickpeas - 400 grams (canned, drained)
  • Preserved lemon - 1 small, pulp removed and rind finely chopped
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2 (whole wheat or regular)
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced

Steps

  1. In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
  2. Add the chopped preserved lemon, red onion, garlic, cilantro, cumin, coriander, salt, black pepper, breadcrumbs, and egg to the mashed chickpeas. Mix well to combine all ingredients thoroughly.
  3. Shape the mixture into two equal-sized patties and refrigerate for about 10 minutes to help them hold their shape during cooking.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the patties and cook for 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, slice the burger buns in half and toast them lightly if desired.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced tomato, and avocado. Top with the other half of the bun and serve immediately.
