Ingredients

  • Chicken thighs - 400 grams
  • Preserved lemons - 2 (rinsed and chopped)
  • Garlic - 3 cloves (minced)
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon
  • Water - 100 ml

Steps

  1. In a bowl, combine the olive oil, minced garlic, cumin, paprika, cinnamon, salt, black pepper, lemon juice, and chopped preserved lemons to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
  3. Preheat your grill or BBQ to medium-high heat.
  4. Remove the chicken from the marinade and discard any excess marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and juices run clear, brushing occasionally with a mixture of water and leftover marinade to keep it moist.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
  7. Garnish with chopped fresh cilantro and serve with a side of your choice.
