Ingredients

- Preserved lemons - 50 grams (about 1 lemon, flesh removed and finely chopped)
- Red onion - 50 grams (1/4 cup, finely diced)
- Garlic - 2 cloves (minced)
- Cilantro - 30 grams (1/4 cup, chopped)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oats - 50 grams (1/2 cup, ground into flour)
- Olive oil - 2 tablespoons (for cooking)
- Whole grain burger buns - 2
- Cucumber - 50 grams (sliced, for topping)
- Tahini - 30 grams (2 tablespoons, for sauce)
- Lemon juice - 1 tablespoon (for sauce)
- Water - 1 tablespoon (for sauce)
- Fresh parsley - 10 grams (1 tablespoon, chopped, for garnish)
Steps
- In a mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
- Add the chopped preserved lemons, red onion, minced garlic, cilantro, cumin, coriander, paprika, chili powder, salt, and black pepper to the mashed chickpeas and mix well.
- Incorporate the ground oats into the mixture until combined. If the mixture is too wet, add more oats as needed.
- Form the mixture into two equal-sized patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the cucumber-tahini sauce by combining tahini, lemon juice, water, and a pinch of salt in a small bowl. Stir until smooth.
- Toast the burger buns lightly in the same skillet, cut side down, until golden.
- Assemble the burgers by placing a patty on each bun, topped with sliced cucumber, a generous drizzle of the tahini sauce, and garnished with chopped parsley.
