Ingredients

  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Preserved lemons - 50 grams (about 1 lemon, flesh removed and finely chopped)
  • Red onion - 50 grams (1/4 cup, finely diced)
  • Garlic - 2 cloves (minced)
  • Cilantro - 30 grams (1/4 cup, chopped)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oats - 50 grams (1/2 cup, ground into flour)
  • Olive oil - 2 tablespoons (for cooking)
  • Whole grain burger buns - 2
  • Cucumber - 50 grams (sliced, for topping)
  • Tahini - 30 grams (2 tablespoons, for sauce)
  • Lemon juice - 1 tablespoon (for sauce)
  • Water - 1 tablespoon (for sauce)
  • Fresh parsley - 10 grams (1 tablespoon, chopped, for garnish)

Steps

  1. In a mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
  2. Add the chopped preserved lemons, red onion, minced garlic, cilantro, cumin, coriander, paprika, chili powder, salt, and black pepper to the mashed chickpeas and mix well.
  3. Incorporate the ground oats into the mixture until combined. If the mixture is too wet, add more oats as needed.
  4. Form the mixture into two equal-sized patties.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, prepare the cucumber-tahini sauce by combining tahini, lemon juice, water, and a pinch of salt in a small bowl. Stir until smooth.
  7. Toast the burger buns lightly in the same skillet, cut side down, until golden.
  8. Assemble the burgers by placing a patty on each bun, topped with sliced cucumber, a generous drizzle of the tahini sauce, and garnished with chopped parsley.
