Ingredients

  • Pizza dough - 250 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Tomato sauce - 100 grams
  • Preserved lemon - 1, flesh removed and rind diced
  • Black olives - 75 grams, pitted and sliced
  • Green olives - 75 grams, pitted and sliced
  • Red onion - 1 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast (optional) - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  4. In a small bowl, mix olive oil and minced garlic, then brush the mixture over the pizza dough.
  5. Spread the tomato sauce evenly on top of the dough.
  6. Distribute the diced preserved lemon, sliced black and green olives, and red onion evenly over the sauce.
  7. Sprinkle ground cumin, ground coriander, salt, and black pepper over the toppings.
  8. Bake the pizza in the preheated oven for 15-20 minutes or until the crust is golden and crispy.
  9. Remove the pizza from the oven and sprinkle chopped parsley and nutritional yeast (if using) on top before slicing.
  10. Let cool for a few minutes before serving.
