Ingredients
- Pizza dough - 250 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Tomato sauce - 100 grams
- Preserved lemon - 1, flesh removed and rind diced
- Black olives - 75 grams, pitted and sliced
- Green olives - 75 grams, pitted and sliced
- Red onion - 1 small, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast (optional) - 2 tablespoons
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled-out dough to a baking sheet lined with parchment paper.
- In a small bowl, mix olive oil and minced garlic, then brush the mixture over the pizza dough.
- Spread the tomato sauce evenly on top of the dough.
- Distribute the diced preserved lemon, sliced black and green olives, and red onion evenly over the sauce.
- Sprinkle ground cumin, ground coriander, salt, and black pepper over the toppings.
- Bake the pizza in the preheated oven for 15-20 minutes or until the crust is golden and crispy.
- Remove the pizza from the oven and sprinkle chopped parsley and nutritional yeast (if using) on top before slicing.
- Let cool for a few minutes before serving.
