- Octopus - 500 grams
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Cilantro - 2 tablespoons, chopped
- Parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
- Tomatoes - 2 medium, chopped
- Carrot - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Water - 250 ml
Steps
- In a large pot, bring water to a boil and add the octopus. Cook for about 20 minutes until tender. Drain and let cool.
- In a mixing bowl, combine olive oil, minced garlic, chopped onion, cilantro, parsley, paprika, cumin, coriander, salt, black pepper, and lemon juice to create a marinade.
- Cut the cooled octopus into bite-sized pieces and add it to the marinade. Mix well, cover, and let it marinate for at least 30 minutes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped tomatoes, sliced carrot, and bell pepper, cooking until softened, about 5-7 minutes.
- Add the marinated octopus to the skillet, along with any remaining marinade and 250 ml of water. Simmer for 15-20 minutes on low heat, stirring occasionally.
- Serve hot, garnished with additional chopped cilantro and parsley if desired.
