  • Potatoes (Yukon Gold) - 300 grams
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 1 tablespoon
  • Fresh parsley, chopped - 2 tablespoons
  • Red onion, finely chopped - 2 tablespoons
  • Cucumber, diced - 100 grams
  • Cherry tomatoes, halved - 100 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Peel the potatoes and cut them into 2 cm cubes.
  2. Place the potato cubes in a pot of salted water and bring to a boil. Cook for about 15 minutes or until tender.
  3. Drain the potatoes and let them cool for a few minutes.
  4. In a large bowl, whisk together the olive oil, lemon juice, salt, black pepper, cumin, and paprika.
  5. Add the cooled potatoes, chopped parsley, red onion, cucumber, and cherry tomatoes to the bowl. Gently toss everything together until well coated.
