- Potatoes - 300 grams, diced
- Frozen peas - 100 grams
- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped

- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a medium pot, bring water to a boil and add the diced potatoes. Cook for about 10-15 minutes until tender, then drain and set aside to cool.
- In the same pot, add the frozen peas and blanch them in boiling water for about 2-3 minutes until bright green. Drain and rinse under cold water to stop the cooking process.
- In a large mixing bowl, combine the cooled potatoes, peas, and finely chopped red onion.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and black pepper to create the dressing.
- Pour the dressing over the potato and pea mixture, and gently toss to combine. Add the chopped parsley and mix again.
