Ingredients

  • Potatoes - 300 grams, diced
  • Frozen peas - 100 grams
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a medium pot, bring water to a boil and add the diced potatoes. Cook for about 10-15 minutes until tender, then drain and set aside to cool.
  2. In the same pot, add the frozen peas and blanch them in boiling water for about 2-3 minutes until bright green. Drain and rinse under cold water to stop the cooking process.
  3. In a large mixing bowl, combine the cooled potatoes, peas, and finely chopped red onion.
  4. In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and black pepper to create the dressing.
  5. Pour the dressing over the potato and pea mixture, and gently toss to combine. Add the chopped parsley and mix again.
  6. Serve immediately or chill in the refrigerator for 15-20 minutes to allow the flavors to meld.
