  • Chicken thighs - 400 grams
  • Pomegranate juice - 120 ml
  • Honey - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh pomegranate seeds - 50 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, mix the pomegranate juice, honey, olive oil, minced garlic, cumin, coriander, paprika, salt, and pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to absorb the flavors.
  3. Preheat the grill or a grill pan over medium heat.
  4. Remove the chicken from the marinade, reserving the marinade for later use. Grill the chicken for about 7-8 minutes on each side or until fully cooked and internal temperature reaches 75°C.
  5. In a small saucepan, bring the reserved marinade to a boil and then reduce to a simmer, cooking for about 5 minutes until slightly thickened.
  6. Brush the cooked chicken thighs with the thickened marinade and allow them to rest for a few minutes.
  7. Garnish with fresh pomegranate seeds and chopped parsley before serving.
