- Pomegranate juice - 120 ml
- Honey - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh pomegranate seeds - 50 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, mix the pomegranate juice, honey, olive oil, minced garlic, cumin, coriander, paprika, salt, and pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to absorb the flavors.
- Preheat the grill or a grill pan over medium heat.
- Remove the chicken from the marinade, reserving the marinade for later use. Grill the chicken for about 7-8 minutes on each side or until fully cooked and internal temperature reaches 75°C.
- In a small saucepan, bring the reserved marinade to a boil and then reduce to a simmer, cooking for about 5 minutes until slightly thickened.
- Brush the cooked chicken thighs with the thickened marinade and allow them to rest for a few minutes.
- Garnish with fresh pomegranate seeds and chopped parsley before serving.
