- Olive oil - 3 tablespoons
- Garlic, minced - 2 cloves
- Red bell pepper, diced - 1 medium
- Zucchini, sliced - 1 medium
- Cherry tomatoes, halved - 200 grams
- Kalamata olives, pitted and sliced - 50 grams
- Fresh parsley, chopped - 2 tablespoons
- Fresh coriander, chopped - 2 tablespoons
- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the diced red bell pepper and sliced zucchini. Cook for 5 minutes until they begin to soften.
- Add the halved cherry tomatoes, Kalamata olives, ground cumin, paprika, salt, and black pepper. Stir well and cook for another 5 minutes.
- Push the vegetables to one side of the skillet and place the white fish fillets in the center.
- Drizzle the lemon juice over the fish and sprinkle with chopped parsley and coriander.
- Cover the skillet and cook for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve the fish with the vegetable mixture on a plate, garnished with additional fresh herbs if desired.
