  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. Preheat the grill or oven to medium-high heat.
  2. In a bowl, mix the diced red and green bell peppers, tomato, onion, garlic, cumin powder, paprika, olive oil, salt, and black pepper to create the vegetable salad.
  3. Place the fish fillets on a greased grill or baking tray, and season with salt, pepper, and lemon juice.
  4. Grill the fish for about 5-7 minutes on each side, or until cooked through and flakes easily with a fork.
  5. While the fish is grilling, heat a skillet over medium heat and sauté the vegetable mixture for about 10 minutes until softened and slightly charred.
  6. Once the fish is cooked, place it on a serving plate and top generously with the sautéed vegetable salad.
  7. Garnish with chopped cilantro and serve with additional lemon wedges if desired.
