Ingredients

  • White fish fillets (e.g., cod or halibut) - 300 grams
  • Fresh cilantro - 30 grams
  • Fresh parsley - 30 grams
  • Garlic - 3 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Olive oil - 4 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a food processor, combine the cilantro, parsley, garlic, cumin, coriander, paprika, cayenne pepper, olive oil, lemon juice, salt, and black pepper. Blend until a smooth paste forms.
  2. Place the fish fillets in a shallow dish and pour the chermoula marinade over them, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. Preheat a grill or grill pan over medium heat. Lightly oil the grill grates to prevent sticking.
  4. Remove the fish from the marinade and shake off excess. Grill the fish for about 4-5 minutes on each side, or until cooked through and flaky.
  5. Serve the Poisson à la Chermoula with a side of fresh salad or couscous, drizzled with any leftover marinade if desired.
