Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Green olives (pitted) - 100 grams
  • Cherry tomatoes - 150 grams
  • Red bell pepper - 1 medium
  • Garlic - 3 cloves
  • Onion - 1 medium
  • Olive oil - 2 tablespoons
  • Cilantro (fresh) - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 5 minutes.
  3. Chop the red bell pepper into small pieces and add to the skillet. Cook for another 3-4 minutes until slightly softened.
  4. Add the cherry tomatoes, green olives, paprika, cumin, salt, and pepper to the skillet. Stir well and let simmer for 5 minutes until the tomatoes begin to break down.
  5. Place the fish fillets in an oven-safe dish and pour the vegetable and olive mixture over the top.
  6. Drizzle the lemon juice over the fish and sprinkle with chopped cilantro.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Remove from the oven, let sit for a couple of minutes, and serve warm.
