- Green olives (pitted) - 100 grams
- Cherry tomatoes - 150 grams
- Red bell pepper - 1 medium
- Garlic - 3 cloves
- Onion - 1 medium
- Olive oil - 2 tablespoons
- Cilantro (fresh) - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 5 minutes.
- Chop the red bell pepper into small pieces and add to the skillet. Cook for another 3-4 minutes until slightly softened.
- Add the cherry tomatoes, green olives, paprika, cumin, salt, and pepper to the skillet. Stir well and let simmer for 5 minutes until the tomatoes begin to break down.
- Place the fish fillets in an oven-safe dish and pour the vegetable and olive mixture over the top.
- Drizzle the lemon juice over the fish and sprinkle with chopped cilantro.
- Cover the dish with aluminum foil and bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven, let sit for a couple of minutes, and serve warm.
