Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes.
- Heat the olive oil in a medium skillet over medium heat and add the chopped onion. Sauté for about 5 minutes until the onion is soft and translucent.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Stir in the paprika, cumin, salt, and black pepper, mixing well with the onion and garlic.
- Pour in the fish stock or water and bring the mixture to a gentle simmer.
- Add the soaked saffron along with its soaking water to the skillet, stirring to combine.
- Carefully place the fish fillets into the skillet, ensuring they are submerged in the sauce. Cover and cook for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
- Once cooked, drizzle the lemon juice over the fish and garnish with fresh parsley before serving.
