Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Saffron threads - 1/4 teaspoon
  • Fish stock or water - 200 ml
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes.
  2. Heat the olive oil in a medium skillet over medium heat and add the chopped onion. Sauté for about 5 minutes until the onion is soft and translucent.
  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Stir in the paprika, cumin, salt, and black pepper, mixing well with the onion and garlic.
  5. Pour in the fish stock or water and bring the mixture to a gentle simmer.
  6. Add the soaked saffron along with its soaking water to the skillet, stirring to combine.
  7. Carefully place the fish fillets into the skillet, ensuring they are submerged in the sauce. Cover and cook for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Once cooked, drizzle the lemon juice over the fish and garnish with fresh parsley before serving.
