  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Bell pepper (red or yellow) - 1 medium, diced
  • Red onion - 1 medium, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon slices - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
  3. Add the fish fillets to the marinade, ensuring they are well-coated. Let them marinate for about 10 minutes.
  4. In a baking dish, layer the cherry tomatoes, diced bell pepper, and sliced red onion.
  5. Place the marinated fish fillets on top of the vegetables in the baking dish.
  6. Drizzle any remaining marinade over the fish and vegetables.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  8. Remove the foil and bake for an additional 5-10 minutes or until the fish is cooked through and flakes easily with a fork.
  9. Garnish with fresh parsley and lemon slices before serving.
