- Bell pepper (red or yellow) - 1 medium, diced

- Fresh parsley - 2 tablespoons, chopped
- Lemon slices - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
- Add the fish fillets to the marinade, ensuring they are well-coated. Let them marinate for about 10 minutes.
- In a baking dish, layer the cherry tomatoes, diced bell pepper, and sliced red onion.
- Place the marinated fish fillets on top of the vegetables in the baking dish.
- Drizzle any remaining marinade over the fish and vegetables.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 5-10 minutes or until the fish is cooked through and flakes easily with a fork.
- Garnish with fresh parsley and lemon slices before serving.
