Ingredients

  • Pizza dough - 250 grams
  • Artichoke hearts (canned or jarred) - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Onion - 1 small, thinly sliced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 75 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled dough to a baking sheet lined with parchment paper.
  4. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the diced red bell pepper and sliced onion to the skillet. Cook for about 5 minutes until the vegetables are softened.
  6. Drain and rinse the artichoke hearts, then add them to the skillet along with cumin, paprika, salt, and black pepper. Stir gently to combine and cook for another 2-3 minutes.
  7. Spread the artichoke and vegetable mixture evenly over the rolled-out pizza dough.
  8. Sprinkle the crumbled feta cheese and shredded mozzarella cheese over the top.
  9. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly and the crust is golden brown.
  10. Remove from the oven and garnish with chopped fresh parsley before slicing and serving.
