- Artichoke hearts (canned or jarred) - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Onion - 1 small, thinly sliced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 75 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper and sliced onion to the skillet. Cook for about 5 minutes until the vegetables are softened.
- Drain and rinse the artichoke hearts, then add them to the skillet along with cumin, paprika, salt, and black pepper. Stir gently to combine and cook for another 2-3 minutes.
- Spread the artichoke and vegetable mixture evenly over the rolled-out pizza dough.
- Sprinkle the crumbled feta cheese and shredded mozzarella cheese over the top.
- Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly and the crust is golden brown.
- Remove from the oven and garnish with chopped fresh parsley before slicing and serving.
