Ingredients

  • Couscous - 150 grams
  • Water - 200 ml
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Onion - 1 small, chopped
  • Cherry tomatoes - 100 grams, halved
  • Garlic - 2 cloves, minced
  • Chickpeas (canned) - 100 grams, drained and rinsed
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste

Steps

  1. In a small pot, bring 200 ml of water to a boil. Add 1/2 teaspoon salt and 150 grams of couscous. Remove from heat, cover, and let it sit for 5 minutes.
  2. Fluff the couscous with a fork and stir in 1 tablespoon of olive oil and 1 teaspoon of ground cumin. Set aside.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic, sautéing until soft, about 3-4 minutes.
  4. Add diced zucchini and red bell pepper to the skillet. Cook for another 5 minutes until they begin to soften.
  5. Stir in halved cherry tomatoes, drained chickpeas, 1 teaspoon of paprika, and black pepper to taste. Cook for an additional 2-3 minutes until heated through.
  6. Preheat your oven to 200°C (390°F).
  7. Spread the couscous evenly on a baking sheet lined with parchment paper to form a pizza base.
  8. Top the couscous base with the sautéed vegetable mixture and sprinkle crumbled feta cheese over it.
  9. Bake in the preheated oven for about 15 minutes, or until the cheese is slightly golden and melted.
  10. Remove from the oven and garnish with chopped fresh parsley before slicing and serving.
