Ingredients
- Couscous - 150 grams
- Water - 250 milliliters
- Pistachios, shelled and chopped - 50 grams
- Olive oil - 2 tablespoons
- Fresh parsley, chopped - 2 tablespoons
- Dried apricots, chopped - 40 grams
- Salt - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Cumin - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, bring 250 milliliters of water to a boil. Add 1/2 teaspoon of salt.
- Once boiling, stir in 150 grams of couscous, cover the saucepan, and remove it from heat. Let it sit for 5 minutes to absorb the water.
- After 5 minutes, fluff the couscous with a fork to separate the grains.
- In a small bowl, combine 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1/4 teaspoon of cinnamon, and 1/4 teaspoon of cumin. Mix well.
- Pour the olive oil mixture over the couscous and stir to combine evenly.
- Add 50 grams of chopped pistachios, 40 grams of chopped dried apricots, and 2 tablespoons of chopped fresh parsley to the couscous. Gently fold everything together until well mixed.
- Taste and adjust seasoning if necessary, then serve warm or at room temperature.
