Ingredients

  • Couscous - 150 grams
  • Water - 250 milliliters
  • Pistachios, shelled and chopped - 50 grams
  • Olive oil - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Dried apricots, chopped - 40 grams
  • Salt - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Cumin - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, bring 250 milliliters of water to a boil. Add 1/2 teaspoon of salt.
  2. Once boiling, stir in 150 grams of couscous, cover the saucepan, and remove it from heat. Let it sit for 5 minutes to absorb the water.
  3. After 5 minutes, fluff the couscous with a fork to separate the grains.
  4. In a small bowl, combine 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1/4 teaspoon of cinnamon, and 1/4 teaspoon of cumin. Mix well.
  5. Pour the olive oil mixture over the couscous and stir to combine evenly.
  6. Add 50 grams of chopped pistachios, 40 grams of chopped dried apricots, and 2 tablespoons of chopped fresh parsley to the couscous. Gently fold everything together until well mixed.
  7. Taste and adjust seasoning if necessary, then serve warm or at room temperature.
