Ingredients

  • Whole wheat pizza dough - 200 grams
  • Beets, roasted and sliced - 150 grams
  • Pistachios, shelled and chopped - 50 grams
  • Vegan mozzarella cheese - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  4. In a small bowl, mix the olive oil, minced garlic, cumin, paprika, salt, and black pepper.
  5. Brush the mixture evenly over the pizza dough.
  6. Spread the roasted beet slices evenly on top of the dough.
  7. Sprinkle the vegan mozzarella cheese over the beets.
  8. Sprinkle the chopped pistachios on top of the cheese.
  9. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
  10. Remove from the oven, drizzle with lemon juice, and sprinkle with fresh parsley before slicing and serving.
