Ingredients

  • all-purpose flour - 200 grams
  • warm water - 120 milliliters
  • active dry yeast - 5 grams
  • olive oil - 2 tablespoons
  • salt - 1 teaspoon
  • sugar - 1 teaspoon
  • onions - 2 medium, thinly sliced
  • black olives - 100 grams, pitted and halved
  • anchovy fillets - 6 pieces (or use capers for a non-fish version)
  • herbes de Provence - 1 teaspoon
  • fresh parsley - 1 tablespoon, chopped
  • black pepper - to taste

Steps

  1. In a bowl, dissolve the sugar and yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a larger mixing bowl, combine the flour and salt, then make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
  5. While the dough rises, heat a tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and cook for about 15-20 minutes, stirring frequently, until caramelized and golden brown. Season with salt, pepper, and herbes de Provence.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and roll it out into a rectangle about 1 cm thick. Place it on a baking sheet lined with parchment paper.
  8. Spread the caramelized onions evenly over the dough, then arrange the black olives and anchovies (or capers) on top.
  9. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  10. Remove from the oven, sprinkle with fresh parsley, slice, and serve warm.
