- all-purpose flour - 200 grams
- warm water - 120 milliliters
- active dry yeast - 5 grams
- olive oil - 2 tablespoons
- salt - 1 teaspoon
- sugar - 1 teaspoon
- onions - 2 medium, thinly sliced
- black olives - 100 grams, pitted and halved
- anchovy fillets - 6 pieces (or use capers for a non-fish version)
- herbes de Provence - 1 teaspoon
- fresh parsley - 1 tablespoon, chopped
- black pepper - to taste
Steps
- In a bowl, dissolve the sugar and yeast in warm water and let it sit for about 5 minutes until frothy.
- In a larger mixing bowl, combine the flour and salt, then make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
- While the dough rises, heat a tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and cook for about 15-20 minutes, stirring frequently, until caramelized and golden brown. Season with salt, pepper, and herbes de Provence.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and roll it out into a rectangle about 1 cm thick. Place it on a baking sheet lined with parchment paper.
- Spread the caramelized onions evenly over the dough, then arrange the black olives and anchovies (or capers) on top.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- Remove from the oven, sprinkle with fresh parsley, slice, and serve warm.
