Ingredients

  • Basmati rice - 1 cup (200g)
  • Pine nuts - 1/4 cup (35g)
  • Olive oil - 2 tablespoons (30ml)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups (500ml)
  • Cinnamon stick - 1
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Raisins - 1/4 cup (40g)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and pine nuts to the pan, cooking for an additional 2-3 minutes until the pine nuts are lightly toasted.
  4. Drain the soaked rice and add it to the saucepan. Stir well to combine with the onion, garlic, and pine nuts.
  5. Pour in the vegetable broth, and add the cinnamon stick, cumin, salt, and black pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  7. After 15 minutes, remove the saucepan from heat and let it sit, covered, for another 5 minutes.
  8. Fluff the rice with a fork, then stir in the raisins. Remove the cinnamon stick and garnish with fresh parsley before serving.
