Ingredients
- Basmati rice - 1 cup (200g)
- Pine nuts - 1/4 cup (35g)
- Olive oil - 2 tablespoons (30ml)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups (500ml)
- Cinnamon stick - 1
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Raisins - 1/4 cup (40g)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and pine nuts to the pan, cooking for an additional 2-3 minutes until the pine nuts are lightly toasted.
- Drain the soaked rice and add it to the saucepan. Stir well to combine with the onion, garlic, and pine nuts.
- Pour in the vegetable broth, and add the cinnamon stick, cumin, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- After 15 minutes, remove the saucepan from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice with a fork, then stir in the raisins. Remove the cinnamon stick and garnish with fresh parsley before serving.
