- Bell pepper - 1 medium, diced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - ½ teaspoon
- Vegetable broth - 400 milliliters
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, and bell pepper. Sauté for an additional 5 minutes until the vegetables are softened.
- Stir in the cumin, coriander, and turmeric, and cook for 1-2 minutes until fragrant.
- Add the cooked pigeon peas and drained rice to the pot, mixing well with the vegetables and spices.
- Pour in the vegetable broth and season with salt and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
