- Green peas - 200 grams (fresh or frozen)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon (adjust to taste)
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, diced carrot, and diced potato. Cook for another 5 minutes, stirring occasionally.
- Add the ground cumin, ground coriander, paprika, salt, and black pepper. Stir well to coat the vegetables with the spices.
- Add the green peas and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the peas and potatoes are tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend just half of the soup.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
