Ingredients

  • Green peas - 200 grams (fresh or frozen)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon (adjust to taste)
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic, diced carrot, and diced potato. Cook for another 5 minutes, stirring occasionally.
  3. Add the ground cumin, ground coriander, paprika, salt, and black pepper. Stir well to coat the vegetables with the spices.
  4. Add the green peas and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the peas and potatoes are tender.
  5. Remove the pot from heat and use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend just half of the soup.
  6. Stir in the lemon juice and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
