- Pasta (spaghetti or linguine) - 150g
- Green olives (pitted and sliced) - 100g
- Cherry tomatoes (halved) - 150g
- Red bell pepper (diced) - 1 medium
- Garlic (minced) - 2 cloves
- Red onion (finely chopped) - 1 small
- Cilantro (chopped) - 2 tablespoons
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced red bell pepper, and halved cherry tomatoes to the skillet. Cook for an additional 5-7 minutes until the vegetables are softened.
- Stir in the sliced olives, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for another 2-3 minutes to combine the flavors.
- Add the cooked pasta to the skillet and toss to coat the pasta evenly with the vegetable and spice mixture.
- Remove from heat and drizzle with lemon juice. Garnish with chopped cilantro before serving.
