Ingredients

  • Gluten-free pasta - 150 grams
  • Zucchini - 1 medium, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, diced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced zucchini to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender.
  4. Stir in the cumin, cinnamon, paprika, salt, and black pepper. Cook for an additional 2 minutes to let the spices toast.
  5. Add the cooked pasta to the skillet and mix well to combine all the ingredients. Drizzle with lemon juice and toss again.
  6. Remove from heat and garnish with chopped fresh cilantro before serving.
