- Zucchini - 1 medium, sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1 small, diced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced zucchini to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender.
- Stir in the cumin, cinnamon, paprika, salt, and black pepper. Cook for an additional 2 minutes to let the spices toast.
- Add the cooked pasta to the skillet and mix well to combine all the ingredients. Drizzle with lemon juice and toss again.
- Remove from heat and garnish with chopped fresh cilantro before serving.
