- Fresh spinach - 200 grams
- Feta cheese - 100 grams, crumbled
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Pine nuts - 30 grams, toasted (optional)
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Stir occasionally to ensure even cooking.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the spinach.
- Add the crumbled feta cheese, lemon juice, cumin, paprika, salt, and black pepper to the pasta and spinach. Toss everything together, adding reserved pasta water as needed to create a creamy consistency.
- If using, sprinkle toasted pine nuts over the pasta before serving for added crunch and flavor.
- Serve hot and enjoy your healthy Moroccan-inspired pasta dish.
