Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Zucchini - 2 medium, diced
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red chili flakes - 1 teaspoon (adjust to taste)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Water - 1 liter (for cooking pasta)
Steps
- Bring 1 liter of water to a boil in a large pot, add a pinch of salt, and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Stir in the diced zucchini and cook for 5-7 minutes until they start to soften.
- Add the red chili flakes, cumin, coriander, paprika, salt, and black pepper to the skillet, stirring well to coat the zucchini in the spices.
- Continue to cook for another 3-4 minutes until the zucchini is tender and the spices are well incorporated.
- Once the pasta is done, drain it and reserve a small cup of pasta water.
- Add the drained pasta to the skillet with the zucchini mixture, tossing everything together. If needed, add a little reserved pasta water to create a light sauce.
- Remove from heat, stir in the fresh parsley and lemon juice, and serve immediately.
