Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Zucchini - 2 medium, diced
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red chili flakes - 1 teaspoon (adjust to taste)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Water - 1 liter (for cooking pasta)

Steps

  1. Bring 1 liter of water to a boil in a large pot, add a pinch of salt, and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Stir in the diced zucchini and cook for 5-7 minutes until they start to soften.
  5. Add the red chili flakes, cumin, coriander, paprika, salt, and black pepper to the skillet, stirring well to coat the zucchini in the spices.
  6. Continue to cook for another 3-4 minutes until the zucchini is tender and the spices are well incorporated.
  7. Once the pasta is done, drain it and reserve a small cup of pasta water.
  8. Add the drained pasta to the skillet with the zucchini mixture, tossing everything together. If needed, add a little reserved pasta water to create a light sauce.
  9. Remove from heat, stir in the fresh parsley and lemon juice, and serve immediately.
