  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced spicy chicken sausage and cook until browned, about 5 minutes.
  3. Add the diced red bell pepper and zucchini to the skillet. Sauté for 3-4 minutes until they begin to soften.
  4. Stir in the minced garlic, cumin, paprika, cinnamon, salt, and black pepper. Cook for another 2 minutes until fragrant.
  5. Add the cooked pasta to the skillet, tossing everything together to combine well. Cook for an additional 2 minutes to heat through.
  6. Remove from heat and stir in the fresh parsley and lemon juice before serving.
