Steps

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced pumpkin to the skillet along with the ground cumin, ground coriander, cinnamon, paprika, salt, and black pepper. Stir well to coat the pumpkin in the spices.
  5. Pour in the vegetable broth, cover, and simmer for 10-15 minutes until the pumpkin is tender.
  6. Once the pumpkin is cooked, mash it slightly with a fork to create a creamy sauce consistency.
