Steps
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced pumpkin to the skillet along with the ground cumin, ground coriander, cinnamon, paprika, salt, and black pepper. Stir well to coat the pumpkin in the spices.
- Pour in the vegetable broth, cover, and simmer for 10-15 minutes until the pumpkin is tender.
