- Lemon juice - 1 tablespoon
- Vegetable broth - 200 milliliters
Steps
- Cook the whole wheat pasta according to package instructions until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and cook for another 1 minute until fragrant.
- Stir in the drained chickpeas, ground cumin, ground coriander, paprika, cayenne pepper, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the chickpeas are slightly crispy.
- Add the vegetable broth to the skillet and let it simmer for 5 minutes, allowing the flavors to meld together.
- Combine the cooked pasta with the spiced chickpea mixture. Toss well to ensure the pasta is coated in the spices.
