- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Cook the whole wheat pasta according to package instructions until al dente, then drain and set aside.
- In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.
- Cut the chicken breast into bite-sized pieces and add them to the marinade, coating well. Let it marinate for about 10 minutes.
- In a large skillet over medium heat, add the marinated chicken pieces and cook until browned and cooked through, about 7-8 minutes.
- Add chopped onion, red bell pepper, and zucchini to the skillet and sauté for another 5-7 minutes until the vegetables are tender.
