  • Shallot - 1, finely chopped
  • Red bell pepper - 1/2, diced
  • Cherry tomatoes - 200 grams, halved
  • Seafood mix (shrimp, mussels, calamari) - 250 grams
  • Saffron threads - 1/4 teaspoon
  • Fish stock - 300 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Add the diced red bell pepper and halved cherry tomatoes to the skillet, cooking until the tomatoes start to soften, about 5 minutes.
  4. Stir in the seafood mix and cook for 3-4 minutes until the seafood is nearly cooked through.
  5. Dissolve the saffron threads in the fish stock, then pour it into the skillet. Bring to a gentle simmer and let it cook for another 5 minutes.
  6. Add the cooked spaghetti to the skillet and toss everything together gently. Drizzle with lemon juice and season with salt and black pepper to taste.
  7. Remove from heat, garnish with chopped parsley, and serve immediately.
