- Shallot - 1, finely chopped
- Red bell pepper - 1/2, diced
- Cherry tomatoes - 200 grams, halved
- Seafood mix (shrimp, mussels, calamari) - 250 grams
- Saffron threads - 1/4 teaspoon
- Fish stock - 300 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the diced red bell pepper and halved cherry tomatoes to the skillet, cooking until the tomatoes start to soften, about 5 minutes.
- Stir in the seafood mix and cook for 3-4 minutes until the seafood is nearly cooked through.
- Dissolve the saffron threads in the fish stock, then pour it into the skillet. Bring to a gentle simmer and let it cook for another 5 minutes.
- Add the cooked spaghetti to the skillet and toss everything together gently. Drizzle with lemon juice and season with salt and black pepper to taste.
- Remove from heat, garnish with chopped parsley, and serve immediately.
