- Lemon juice - 1 tablespoon
- Toasted almond slices - 30 grams (for garnish)
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their flavor.
- Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the finely chopped shallot and sauté for 3-4 minutes until soft.
- Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to prevent burning.
- Pour in the vegetable broth and bring to a simmer. Stir in the soaked saffron along with its soaking water, raisins, and cooked chickpeas.
- Simmer the mixture for 5-7 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
- Add the cooked pasta to the skillet, tossing gently to coat the pasta with the saffron sauce. Cook for another 2-3 minutes until heated through.
- Remove from heat and stir in the chopped cilantro and lemon juice.
