  • Raisins - 50 grams
  • Chickpeas - 100 grams, cooked
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Toasted almond slices - 30 grams (for garnish)

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their flavor.
  2. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the finely chopped shallot and sauté for 3-4 minutes until soft.
  4. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to prevent burning.
  5. Pour in the vegetable broth and bring to a simmer. Stir in the soaked saffron along with its soaking water, raisins, and cooked chickpeas.
  6. Simmer the mixture for 5-7 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
  7. Add the cooked pasta to the skillet, tossing gently to coat the pasta with the saffron sauce. Cook for another 2-3 minutes until heated through.
  8. Remove from heat and stir in the chopped cilantro and lemon juice.
